🎄 𝙵𝚎𝚜𝚝𝚒𝚟𝚎 𝙲𝚑𝚛𝚒𝚜𝚝𝚖𝚊𝚜 𝚃𝚛𝚎𝚎 𝙼𝚊𝚌𝚊𝚛𝚘𝚗𝚜 𝚆𝚒𝚝𝚑 𝙿𝚘𝚖𝚎𝚐𝚛𝚊𝚗𝚊𝚝𝚎 & 𝙼𝚒𝚗𝚝 𝙲𝚛𝚎𝚊𝚖 🎄

𝙸𝚗𝚐𝚛𝚎𝚍𝚒𝚎𝚗𝚝𝚜:
𝑴𝒂𝒄𝒂𝒓𝒐𝒏 𝑺𝒉𝒆𝒍𝒍𝒔:
1 cup almond flour
1 cup powdered sugar
2 large egg whites, room temperature
1/4 cup granulated sugar
Green gel food coloring
𝑷𝒐𝒎𝒆𝒈𝒓𝒂𝒏𝒂𝒕𝒆 𝑴𝒊𝒏𝒕 𝑪𝒓𝒆𝒂𝒎 𝑭𝒊𝒍𝒍𝒊𝒏𝒈:
1/2 cup heavy cream, chilled
2 tbsp powdered sugar
1/4 cup pomegranate seeds
1/2 tsp mint extract
Optional: a few drops of green food coloring for a festive touch
𝑫𝒆𝒄𝒐𝒓𝒂𝒕𝒊𝒐𝒏:
Edible gold star toppers
Additional pomegranate seeds for garnish
Fresh mint leaves, dusted lightly with powdered sugar

𝙸𝚗𝚜𝚝𝚛𝚞𝚌𝚝𝚒𝚘𝚗𝚜:
1. 𝑷𝒓𝒆𝒑𝒂𝒓𝒆 𝑴𝒂𝒄𝒂𝒓𝒐𝒏 𝑺𝒉𝒆𝒍𝒍𝒔:
Preheat oven to 300°F (150°C). Line two baking sheets with parchment paper.
Sift almond flour and powdered sugar together to remove any lumps.
In a mixing bowl, whisk egg whites until foamy. Gradually add granulated sugar and beat until stiff peaks form. Add a few drops of green gel food coloring.
Gently fold in almond flour mixture, ensuring not to deflate the batter. The batter should flow like lava.
Pipe the macaron batter onto the prepared baking sheets, forming small round discs of two different sizes for the Christmas tree layers.
Let the macarons rest for 30-60 minutes to form a skin.
Bake for 15-18 minutes, until set. Allow to cool completely before removing from the baking sheets.
2. 𝑴𝒂𝒌𝒆 𝑷𝒐𝒎𝒆𝒈𝒓𝒂𝒏𝒂𝒕𝒆 𝑴𝒊𝒏𝒕 𝑪𝒓𝒆𝒂𝒎 𝑭𝒊𝒍𝒍𝒊𝒏𝒈:
In a chilled bowl, beat heavy cream and powdered sugar until soft peaks form.
Fold in pomegranate seeds and mint extract. Add green food coloring if desired.
Transfer the cream to a piping bag for easy filling.
3. 𝑨𝒔𝒔𝒆𝒎𝒃𝒍𝒆 𝑴𝒂𝒄𝒂𝒓𝒐𝒏 𝑪𝒉𝒓𝒊𝒔𝒕𝒎𝒂𝒔 𝑻𝒓𝒆𝒆𝒔:
Pipe a layer of pomegranate mint cream on the bottom macaron layer. Place a smaller macaron layer on top and repeat with more cream.
Add pomegranate seeds and mint leaves to decorate. Top each tree with an edible gold star.

🎄 𝙼𝚊𝚕𝚝𝚎𝚜𝚎𝚛 𝙲𝚑𝚛𝚒𝚜𝚝𝚖𝚊𝚜 𝙳𝚎𝚕𝚒𝚐𝚑𝚝 🎄
𝙸𝚗𝚐𝚛𝚎𝚍𝚒𝚎𝚗𝚝𝚜:
11/2 cups brown sugar
1 cup milk
190g butter
1 1/4 cups self-raising flour
3/4 cup cocoa powder
4 eggs
300g dark chocolate melts
125ml thickened cream
30g butter
465, Mars Maltesers
200g white chocolate melts
2 Allen's Jaffas
2 Mint Leave

𝙸𝚗𝚜𝚝𝚛𝚞𝚌𝚝𝚒𝚘𝚗𝚜:
1. Preheat the oven to 180˚C. Grease inside of a pudding steamer with butter.
2. In a large bowl place brown sugar, milk & butter& melt in microwave.
3. Whisk in dry ingredients: flours & cocoa. Mix eggs together in a jug & whisk in to dry ingredients until combined.
4. Pour into steamer & place in oven (no lid) - 40 minutes. Check after 40 minutes & turn heat down to 170˚C.
5. Cook for another 10 minutes or until skewer comes out clean. Cool completely before adding ganache.
6. Melt dark chocolate, butter & cream together in microwave. Leave for 15 min to thicken.
7. Cut top off pudding cake, & flip over to decorate.
8. Cover cake with ganache. Before the ganache cools completely, start adding the Maltesers. Begin in the center, forming one row down the middle, work outwards in lines across cake.
9. Chill cake in fridge for two hours. Once chilled, melt white chocolate in the microwave. Leave to cool to room temperature before pouring over cake (otherwise the Maltesers will melt.)
12. Once chocolate is room temperature (don't wait too long or the chocolate will start to set hard again) pour over top of cake so it looks like the custard on a Christmas pudding.
13. Finish it off with two Jaffas and some mint leaves.

𝙽𝚘𝚝𝚎𝚜:
1. You can put whatever cake recipe is your favourite cake recipe inside the "pudding."
2. If you don't have a pudding steamer, you can cook your cake in a glass Pyrex bowl.

🎄 𝙼𝚒𝚗𝚒 𝙲𝚑𝚛𝚒𝚜𝚝𝚖𝚊𝚜 𝙲𝚑𝚊𝚛𝚌𝚞𝚝𝚎𝚛𝚒𝚎 𝚆𝚛𝚎𝚊𝚝𝚑 𝙱𝚘𝚊𝚛𝚍 🎄
𝙸𝚗𝚐𝚛𝚎𝚍𝚒𝚎𝚗𝚝𝚜:
🌿 1/2 Cup fresh basil leaves
🌿 6 sprigs fresh rosemary
🍅 500g grape tomatoes
🟢 1/2 jar green olives
🧀 250g bocconcini (small mozzarella balls)
🥓 60g thinly sliced prosciutto
🥓 60g thinly sliced salami
𝙸𝚗𝚜𝚝𝚛𝚞𝚌𝚝𝚒𝚘𝚗𝚜:
1. Base Layer: Arrange rosemary in a small wreath shape on your board & tuck in your basil leaves to add the green.
2. Place bocconcini around the wreath, adding basil leaves on tooth picks for style.
3. Fold each slice of prosciutto & salami into loose rolls or ruffles & nest around the rosemary.
4. Evelyn place grape tomatoes and olives to add festive red & green colour.
5. Adjust any gaps with basil leaves and fluff to give it a full, festive look.
